Turkey Mince and Vege Lasagna

About the Recipe

This lasagne is so easy and packed full of hidden vegetables! It is a meaty take on our vege lasagne using organic, locally farmed, lean turkey mince. This hearty meal pairs perfectly with a fresh salad! Enjoy!

Ingredients

2x sweet potato


2x Capsicum


2x Zucchini


1/2 a bag of Spinach


Tub of Ricotta


Parmesan + basil to top


For the sauce:


2x small onions


4 x Garlic cloves


500g organic turkey mince


1x bottle of Passata


1 tbsp Italian herbs


Salt + Pepper

Preparation

Cut the sweet potato, capsicum and zucchini into thin slices and bake in the oven until slightly cooked.


Meanwhile, chop the onion and garlic and cook in a large fry pan with some olive oil for a few mins. Add in turkey mince and cook until brown.


Add the bottle of passata, Italian herbs and season with salt and pepper. Let it simmer for 10 mins. Set aside.


Lay the cooked veggies, spinach, ricotta and sauce in a large rectangular dish and repeat until all the veggies have been used. I placed the sweet potato at the bottom, then the spinach, sauce, ricotta, zucchini/capsicum, ricotta, sauce.


Top with Parmesan, salt and pepper, and a sprinkle of basil.


Bake in the oven for 40-50 mins on 180°C.
