About the Recipe
For all those who love a classic cinnamon roll but want a healthier option without compromising on taste, try my single-serve chocolate and peanut butter cinnamon scroll recipe! This recipe is easy, quick, and perfect for one serving.
To make the dough, mix 1/4 + 2 tbsp plain flour, 1/4 tsp baking soda, 2 tbsp almond milk, 2 tbsp olive oil, 1/2 tsp vanilla, 1/2 tsp cinnamon, and a pinch of salt. Once a sticky dough forms, place it on a floured surface and knead for 30 seconds to a minute before rolling it out until thin.
For the filling, spread some olive oil on the dough followed by a dollop of peanut butter. Sprinkle some coconut sugar, cinnamon, and chocolate chips on top, and roll the dough into a shape of a cinnamon scroll. Place it in a small oven-safe ramekin and bake it for 15-20 minutes at 180°C.
To top it off, mix melted chocolate chips and peanut butter until smooth and pour it over the scroll. Enjoy it immediately!

Dough:

Coconut sugar
Olive oil
Chocolate chips
Cinnamon
To top:
1-2 tbsp choc chips, melted
1/2 tbsp peanut butter
Preparation
1. Mix all ‘dough’ ingredients in a bowl until a sticky dough forms.
2. Place onto a floured surface and lightly kneed for 30 seconds - 1 minute. Roll out with a rolling pin until the dough is thin.
3. Add your filling ingredients. Start by brushing the dough with some olive oil, then spread a dollop of peanut butter evenly. Sprinkle some coconut sugar, cinnamon, then your choc chips. Roll the dough into a shape of your cinnamon scroll.
4. Place in a small oven safe ramekin and bake for 15-20 mins on 180°C.
5. Mix your melted choc chips & peanut butter together until smoothie. Pour your topping over the scroll and enjoy immediately!
