About the Recipe

This Single Serve Apple Tart is so delicious, quick to make & is the perfect afternoon snack. The apples, coconut sugar & cinnamon work so well together and the crunchy crust balances it out perfectly. It is also gluten free, dairy free & vegan!

Ingredients

TART:

1/4 cup almond meal

1/4 cup oat flour

2 tbsp maple syrup

1 tbsp peanut butter

1 tsp vanilla


APPLE PURÉE:

3/4 apple, peeled & diced

1 tsp coconut sugar

1 tsp cinnamon

Splash of water (add more if needed)


TOPPING:

Extra coconut sugar

Preparation

Mix tart ingredients together in a bowl until sticky. Line your mini tart tin with baking paper and pour the mixture in. Flatten the mixture evenly in and around the tin.


Prickle the base with a fork and bake in oven for 10 mins on 180°C.


Add the apple purée ingredients into a saucepan over medium heat and allow your apple to soften.


Once soft, pour into blender and blend until it is puréed.


Pour into the centre of your tart, and top with the leftover apple slices.


Bake in the oven for another 15 mins until golden.


Sprinkle with some extra coconut sugar & enjoy!
