2 eggs, whisked with water

Sourdough toast

1 avocado

Bunch of kale

Tomatoes

Preparation

Simply crack 2 eggs in a bowl with some water and whisk well. Pour into a small fry pan with butter and stir slowly around and then through the pan. The key is keeping the pan on low to medium heat & taking it off just as the eggs are cooked! Serve with fresh sourdough, avocado & greens.
