About the Recipe

Ingredients
SALAD:
1-2 cups spinach
1 chicken breast, poached
1-2 beetroot, finely sliced
20g feta cheese
1/2 cup cous cous
1 cucumber, sliced
8 cherry tomatoes, sliced
Sprinkle of dukkah
TAHINI DRESSING:
2 tbsp Tahini
Juice from 1/2 lemon
1/2 tsp Dijon mustard
1 tsp Maple syrup (optional)
2 tsp water (if needed)
Pinch of salt
Preparation
1. Cook your chicken (how you choose). I like to poach mine.
2. Cook your cous cous as per the packet instructions.
3. Construct your salad! Add everything to a bowl.
4. Make your dressing! Add all tahini dressing ingredients into a separate bowl and whisk.
5. Pour dressing over your salad and mix well.
6. Season with salt & pepper and enjoy!
