Next, add in a can of coconut milk, a few tablespoons of peanut butter, and your preferred spices such as curry powder, cumin, and turmeric. Stir everything together until the peanut butter is fully incorporated and the sauce is smooth. Bring the curry to a simmer and let it cook for an additional 5-10 minutes, or until the vegetables are fully cooked and the sauce has thickened. Ingredients
1x onion diced
2x garlic diced
2 tbsp curry powder
2 tbsp peanut butter
450g frozen spinach
3x carrots sliced
1x tinned tomatoes
1x tin coconut milk
1x cup frozen beans
1x tin chickpeas
Coriander to serve
Preparation
1. Cook onion + garlic in olive oil in a large pot.
2. Add curry powder + peanut butter and stir.
Add tinned tomatoes, coconut milk, chickpeas, and carrots and mix through.
3. Add spinach and beans.
4. Allow to simmer on low heat for a few hours, adding stock when necessary so it doesn’t get too thick.
5. Season with lots of salt + pepper. Top with a sprinkle of coriander.
