Looking for an easy, quick and vegetarian dinner?! Then this superfood bowl is for you! This delicious Miso Eggplant bowl is a great option when you want to whip up something yummy and filling but won’t leave you feeling heavy.
Ingredients
1/2 cup brown rice
1 eggplant, diced
3 cups spinach
1 broccoli
1/2 avocado
Sesame seeds + chilli flakes to serve
MISO DRESSING:
2 tbsp sesame oil
2 tbsp soy sauce or tamari
2 tbsp honey
4 tbsp white miso paste
1 tbsp apple cider vinegar
1 tbsp sesame seeds
1cm finely grated ginger
Preparation
Prepare diced eggplant on a baking tray and drizzle with olive oil. Prepare miso sauce by mixing all ingredients together then generously drizzle over eggplant. Bake in oven for 20 mins or until soft on 180°C.
Cook brown rice as per instructions on packet.
Steam/roast broccoli until cooked.
Heat 1 tsp olive oil on fry pan and add spinach. Sauté until bright green.
Add all ingredients to a bowl, adding some avocado on top. Sprinkle with sesame seeds and chilli flakes.
