About the Recipe

Introducing a delicious, super easy, and surprisingly quick-to-make healthy lemon tart! Making a traditional lemon tart is often seen as an intimidating process of working with pastry dough, creating custard and then blind baking. I am here to show you that it’s not nearly that daunting; with my easy recipe anybody can make a delicious, healthy alternative. This tart has no refined sugars or unhealthy fats – just an assortment of natural ingredients such as coconut & almond that come together perfectly in order to create an irresistible dessert! Whether you’re feeding a family or entertaining friends, this zesty citrus delight won’t give away any of its secret nutritional goodness - they'll just think they are having an indulgent treat! Not only will you have them asking for more but also impressed at how nutritious and light it really is!

Ingredients

BASE:

1 cup almond meal

1 cup desiccated coconut

2 tbsp maple syrup

1/4 cup melted coconut oil

1 tsp vanilla essence


LEMON CURD:

3 eggs

1/4 cup honey

1/4 cup coconut oil

Zest of 1.5-2 large lemons and 1/2 cup lemon juice

Preparation

Step 1

Add all ‘base’ ingredients in a bowl and mix with a fork until combined and the mixture is slightly sticky/wet.


Step 2

Pour into a relatively small lined tart tin and evenly spread the mixture in and around the tin.


Step 3

Bake in oven for 15-20 mins on 180°C or until golden.


Step 4

Meanwhile, make the curd. In a medium saucepan, gently whisk the eggs and honey over low heat until it comes together.


Step 5

Add in the coconut oil. Cook, whisking occasionally until the oil is melted. (About 2-5 mins).


Step 6

Add in the lemon juice and zest and continue whisking gently until the mixture becomes thick.


Step 7

Remove from heat and continue whisking for another minute.


Step 8

Immediately pour mixture through a sieve to get out any clumps.


Step 9

Pour the mixture over ‘base’ and allow to set in fridge for a few hours/overnight.
