Ingredients
1 very overripe banana, mashed
1/4 cup coconut oil, melted
1/4 cup maple syrup
2 eggs
1 tsp vanilla
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 cup almond milk
3-4 carrots, finely grated (about 1 & 1/4 cups)
2/3 cup rolled oats
1 cup almond meal
1/2 cup coconut flour
Pinch of salt
Cream cheese frosting:
80g light cream cheese
1-2 tbsp honey
2 tbsp lemon juice
Preparation
1. Add the banana, coconut oil, maple syrup, eggs, and vanilla to a bowl and mix well.
2. Stir through your all remaining ingredients and mix well. If the mixture is too dry, add slightly more almond milk.
3. Pour into lined loaf tin and bake in the oven for 50-65 minutes on 180°C or until golden and a skewer comes out clean.
4. Allow to cool completely.
5. Make your cream cheese frosting by whisking the ingredients together.
6. Pour over carrot cake once it’s cooled.
7. Slice up and enjoy!
