About the Recipe
I was introduced to this Green Goddess Salad after it went viral from Baked By Melissa's TikTok! I knew after seeing everybody make it that I had to create it myself. Not only is it vegan, packed full of nutrients and easy to make, it is also super versatile and can be used as a dish, side salad, or add some protein such as salmon or tuna to make it a super wholesome dinner. It has become a favourite in many people's households, especially those looking for a tasty and healthy way to incorporate more vegetables into their diet.
Ingredients
For the salad:
1 small head green cabbage
2 cucumbers
1/4 cup chives
1 bunch spring onion
For the dressing:
1 cup basil leaves
1 cup spinach
2 cloves garlic
2 lemons, juiced
1/4 cup olive oil
1/4 cup cashew nuts
1/3 cup nutritional yeast
Pinch of salt
2 tablespoons rice vinegar (or any vinegar you have at home, such as Apple Cider Vinegar or White Wine Vinegar)
1/4 of one chive, chopped
Preparation
Wash and finely chop all of the salad ingredients and place in a bowl.
Add all of the dressing ingredients to a blender and blend for 1-2 minutes or until smooth and creamy.
Pour your dressing into the salad and mix well.
Serve with corn chips or as a side salad.
