Ingredients

1/2 cup peanut butter

2 tbsp coconut oil

1/4 cup maple syrup or honey

1 tsp vanilla

1/2 cup vanilla protein powder

1 cup oats

2 tbsp chia seeds

1/3 cup shredded coconut

2 squares of dark chocolate

Preparation

1. Heat the peanut butter, coconut oil, maple syrup and vanilla in a small saucepan on low heat until smooth and creamy.

2. Allow to cool slightly, then stir in protein powder.

3. Add oats, chia seeds and coconut and stir well.

4. Pour into lined loaf tin and press down evenly.

5. Melt your chocolate squares and drizzle over the top of the bars.

6. Allow to set in freezer for 1-2 hours, before cutting into bars.

7. Store in airtight container in freezer!
