Ingredients
3 cups plain flour
1/4 cup coconut sugar
7g dry yeast
2 tsp cinnamon
1 tsp all spice/nutmeg
Pinch of salt
2 eggs, whisked
150mL milk
25g butter
1/2 cup dark choc chips
Cross:
60g plain flour
50g water
Glaze:
1/4 cup coconut sugar
2.5 tbsp water
1 tsp cinnamon
Preparation
1. Add the flour, coconut sugar, yeast, cinnamon, spices & salt to a mixing bowl and stir well.
2. Add your milk & butter to a saucepan on low heat and stir until the butter is just melted. You don’t want the milk to be boiled, it should be just warm. Take off heat and put to side.
3. Add in your whisked eggs to the dough & stir with your hands (mix with a hook if you have a mixer).
4. Add the warm milk mixture and keep mixing until the dough comes together. You can use your hands here & mix for about 3-5 minutes.
5. Turn the dough out onto a flour surface and make into a large ball.
6. Place onto a large oiled bowl and cover for 1 hour until doubled in size.
7. Turn out dough from the bowl and cut into 8-12 balls, bringing each together with the palm of your hand (ideally with no seams) and putting on a lined baking tray.
8. Cover with a tea towel and allow to rise until they have doubled in size (about an hour).
9. For the cross, mix the flour & water together and place in a piping bag and once the buns have doubled in size, pipe out a cross on each one.
10. Bake in the oven for 25 minutes on 170*C.
11. Once the buns are out of the oven, mix your glaze ingredients together and brush over the buns.
12. Serve with a dollop of butter!
