Ingredients
For the chicken:
1 chicken breast, sliced
1 tbsp paprika
1 tsp cayenne pepper
1 tsp turmeric
1 tsp ground cumin
1 tsp coriander seeds
1 tbsp dried thyme & oregano
Salt & pepper
For the salad:
Handful of kale & spinach
Sweet potato
Tomato
Cucumber
Edamame noodles
Chicken
Avocado
Feta
Tahini dressing:
2 tbsp Tahini
Juice from 1/2 lemon
1/2 tsp Dijon mustard
1 tsp Maple syrup (optional)
2 tbsp water (if needed)
Pinch of salt
Preparation
1. Add all the spices to the chicken and rub in well with a drizzle of olive oil.
2. Bake in oven for 25 mins on 180°C.
3. Prepare your salad by adding all salad ingredients. Place your chicken on top.
4. Make your tahini dressing by adding ingredients together.
5. Drizzle over salad & enjoy!
