About the Recipe
My healthy apple and cinnamon cake recipe is an ideal dessert! This recipe uses wholesome ingredients to create a delicious cake that is not only tasty but also nutritious.
Ingredients:
The dry ingredients for this recipe include 1 and 3/4 cup of white spelt flour, 1/4 cup of coconut sugar, 1 teaspoon of baking soda, 2 teaspoons of cinnamon, and a pinch of salt. To add some sweetness to the cake, you need to thinly slice one apple and sprinkle it over the top of the cake.
For the wet ingredients, you need to whisk together two eggs, 1/2 cup of Greek yoghurt, 1/4 cup of maple syrup, 1 teaspoon of vanilla, 1/4 cup of almond milk, and one tablespoon of olive oil. If you want to reduce the sweetness of the cake, you can substitute Greek yoghurt with apple sauce.
Preparation:
In a large bowl, mix all the dry ingredients except the apple slices. In another bowl, whisk all the wet ingredients until they are well-combined. Once the wet mixture is ready, gently pour it into the dry mixture and stir until the batter is smooth. Pour the prepared batter into a lined cake tin and arrange the thinly sliced apple on top. Bake the cake in the oven at 180°C for 45 minutes.

DRY:
1 & 3/4 cup white spelt flour
1/4 cup coconut sugar
1 tsp baking soda
2 tsp cinnamon
Salt
1 apple, thinly sliced
WET:
2 eggs
1/2 cup greek yoghurt
1/4 cup maple syrup
1 tsp vanilla
1/4 cup almond milk
1 tbsp olive oil
Preparation
1. Add dry ingredients to a bowl (except apple) and mix well.
2. In a separate bowl, whisk together wet ingredients.
3. Mix wet to dry.
4. Pour into a lined cake tin & top with your sliced apple.
5. Bake in the oven for 45 mins on 180°C.
Note: You could sub the Greek yoghurt for apple sauce, just do less maple syrup as it’s quite sweet.
